What you do
- Grind the spices, and blend together well.
- Wash, scrub, peel the vegetables as you need.
- Melt the coconut oil in a large pan, and add the vegetables, turning to coat well in the oil.
- Add the crushed spices, along with a pinch of salt.
- Preheat your oven to 220⁰C / 425⁰F / Gas Mark 7.
- Place the mixture in a roasting tin and roast in the oven for 40 minutes, turning halfway through.
