This non-alcoholic mojito recipe is Iideal for a BBQ or al fresco lunch to refresh the palate and settle the digestion. Cooling and invigoratingrefreshing, mint both refreshes the senses while also invigorating the digestionbuilding your digestive fire. What you need:
2 Pukka organic Three Mint tea bags
1 lime, quartered
1 tsp of granulated sugar or maple syrup (optional)
A sprig of fresh mint for garnish
Place the tea bags in a jug and pour over 100ml of boiling water.
Stir in sugar or maple syrup if desired, cover and let the mixture steep for at least 30 minutes.
When the mixture is completely cool, prepare 2 glasses with ice and divide the tea mixture between them.
Squeeze two segments of lime into each glass and throw the segments in, for added flavour and garnish.
Top each glass up with sparkling water and give a gentle stir.
Garnish with a sprig of mint and serve.
